Here’s another one of our favourite salads. It’s simply devastatingly delicious, and fresh, and filling, and healthy.
Brussels sprouts and almond salad
Ingredients (for 2)
appr. 150-200 gr Brussels sprouts, steamed and cut to halves
appr. 12 red radishes, chopped into small cubes/sliced
appr. 5 cm lenth of cucumber, chopped into cubes
appr. 50 gr of almonds, chopped roughly and toasted
2 tablespoonfuls of olive oil
2 tablespoonfuls of lemon juice
chopped fresh parsley
That’s basically it. You put it all into a bowl, you toss the liquids on, you mix, and at the end, sprinkle with the almonds.
